Easy Chicken Salad

My favorite lunch is an easy and convenient lunch, and that’s where chicken salad comes in! I usually make the chicken from scratch but if you ever have leftover chicken from the night before or a rotisserie chicken handy, this will be the easiest recipe in the world!

I’ve been making this recipe for like 5 years now I just finally measured the ingredients and decided to get some pictures of it. This is actually the simplest recipe ever and you only need five ingredients for a tasty and nutritious lunch!

I personally love using this chicken salad to make into wraps using either Siete almond flour tortillas or collard greens for a low carb option! Or if I am feeling lazy I’ll just grab some Simple Mills crackers and this is the perfect on the go meal.

The key to making this chicken salad amazing is the Primal Kitchen mayonnaise. I personally have not tried with any other mayos because primal kitchen is just so delicious and has the best and cleanest ingredients. I know they also make a vegan option if eggs don’t agree with you. Also, this mayo is now at Costco in a HUGE container, not like anyone needs that much mayo but if you make this recipe enough times you might! What you need:

Chicken Breasts

Primal Kitchen Mayonnaise

Celery

Salt

Pepper

Ingredients:

2 large shredded chicken breasts

1/2 cup Primal Kitchen Mayonnaise

2 chopped up celery stalks (optional)

1/2 teaspoon salt

1/4 teaspoon pepper

Instructions:

  1. Saute chicken in a pan.

  2. Shred chicken either with a fork or hand mixer

  3. Add mayonnaise to shredded chicken

  4. Mix in salt, pepper, and celery

    enjoy!
