Paleo Irish Soda Bread

You don’t have to be Irish to celebrate St. Patrick’s Day and all of the amazing food it has to offer! Whether you’re making corned beef and cabbage or Irish soda bread, you know that the food is enough to make your mouth water every time the calendar flips to March.

While corned beef and cabbage is inherently gluten and dairy free, Irish soda bread is not! If you know me then you know that I don’t believe my dietary restrictions should be limiting my ability to eat good food. In fact I eat better than most people I know because the food I make is both nutritious and delicious.

While I can’t call a sweet like paleo Irish soda bread nutritious, it definitely is delicious. It may not look the part of traditional Irish soda bread since I did not bake it in a circle but rather in a bread pan, but I promise your tastebuds won’t know the difference.

Like all recipes I make, I try to keep the ingredient list as simple as possible. Made with just 8 simple ingredients, you won’t struggle with the directions for this recipe.

I usually try to avoid coconut sugar as it can spike your blood sugar and more than other sweeteners like maple syrup and has less nutritious value. However, I find coconut sugar really key in this recipe to giving you the flavor you desire. Other sweeteners may work if you are in a pinch but I really suggest coconut sugar for the flavor it provides.

You don’t have to just eat this recipe on St. Patrick’s Day, you can enjoy it any time of year!

What you’ll need:

Almond flour

Tapioca flour

Eggs

Almond milk

Coconut sugar

Raisins

Baking Soda

Lemon juice

Salt

Ingredients:

2 cups almond flour

1/2 cup tapioca flour

3 eggs

1/2 cup almond milk

1/4 cup coconut sugar

1/2 cup raisins

1/2 teaspoon baking soda

2 teaspoons lemon juice

Pinch of salt

Instructions:

  1. In a large bowl mix all dry ingredients together.

  2. Sift in your wet ingredients until dough is formed.

  3. Add in your raisins.

  4. Put your dough into a bread pan and bake at 350 degrees for 40 minutes or until fully cooked.
