Paleo Pigs in Blankets

So many people think that eating a paleo diet means all you eat is meat and vegetables. Yes that may make up a bulk of my diet but I still love eating all my old favorites from when I was a kid.

Adapting my favorite childhood meals to fit my paleo diet is one of my favorite things. Like can she do it? You bet I’m always going to try. These pigs in blankets may not be as easy as buying a container of pillsbury crescent rolls but let me tell you they are even more delicious.

For the sausages I use Amylu Chicken Breakfast Links that I find at Costco, but any miniature sausage or hotdog will do. These are a staple in my house for breakfast so I always have them on hand. They are the perfect flavor and they are paleo!

The key to this recipe is refrigerating the dough so it solidifies. Once you do that you need to roll out the dough in cassava flour like you are making cookies. Then cut the dough into triangles, the same shape as the pillsbury crescent rolls before they are rolled.

This recipe is perfect for any tailgate, barbecue or whatever cocktail party you have to go to this holiday season.

What you need:

Mini hot dogs or sausages

Almond flour

Tapioca flour

Cassava flour

Eggs

Olive Oil

Salt

Ingredients:

1 package hot dogs/sausages

1/2 cup almond flour

1/2 cup tapioca flour

3 tablespoons cassava flour + extra to roll dough

2 eggs

1/4 cup olive oil

1 teaspoon salt

Instructions:

  1. Mix all flours in a bowl with salt.

  2. Add olive oil and eggs.

  3. Mix until thoroughly combined.

  4. Refrigerate for 30+ minutes.

  5. Roll dough out in cassava flour so it does’t stick and cut into triangles.

  6. Roll one sausage into one triangle of dough.

  7. Place on parchment paper on a cookie sheet and repeat until all sausages are in ‘blankets’.

  8. Bake at 350 degrees F until top is golden brown
