Paleo/Vegan Chocolate Chip Cookies

I recently started dating a guy that has multiple vegan family members, and if you know anything about me it’s that I love a challenge especially when it comes to making delicious food for people with dietary restrictions. I also hate showing up to a family party empty handed so I started dabbling in the world of vegan baked goods.

This is the chocolate chip cookie recipe that you’ll wish you knew about when you first when paleo. They have simple ingredients, are soft when right out of the oven, but upon cooling get perfectly crispy. So they are pretty much the best of both worlds when it comes to your chocolate chip cookie needs.

The best part about vegan baking is that you are free to eat the cookie dough without worrying about salmonella! Let’s be real we’ve all eaten cookie dough made with eggs before but now you know that what you’re eating is 100% safe! Whether you want to make this recipe for the actual cookies or just to eat the dough, either way you won’t be disappointed!

I’ve made these cookies with both ghee and coconut oil and both are equally delicious. However, only the coconut oil will make these vegan! When baking with coconut oil be sure to use the refined version to avoid the coconut flavor!

My favorite chocolate chunks to use for baking are Hu Kitchen dark chocolate gems- they’re paleo, vegan, and just downright delicious. With only 3 ingredients how could you go wrong! Also if you’re in the Northeast they sell a 20 oz bag at Costco, which is the best price I’ve seen for them!

What you’ll need:

Almond flour

Tapioca flour

Refined coconut oil or ghee

Almond butter

Maple syrup

Flax egg (1 tbsp ground flax and 3 tbsp water)

Cacao

Vanilla

Baking Soda

Chocolate chips

Ingredients:

1 cup almond flour

1/4 cup tapioca flour

1/4 cup melted refined coconut oil or ghee

1/4 cup almond butter

1/4 cup maple syrup

1 flax egg (1 tbsp ground flax and 3 tbsp water, let sit for 10 mins)

1 teaspoon cacao

1 teaspoon vanilla

1 teaspoon baking soda

1/2 cup chocolate chips

Instructions:

  1. Combine all dry ingredients in a bowl.

  2. Combine all wet ingredients in another bowl. On the side make flax egg, let sit for 10-15 mins.

  3. Combine wet and dry ingredients, add flax egg.

  4. Mix thoroughly and add chocolate chips to your heart’s desire.

  5. Scoop small balls of dough and place on cookie sheet, about 2 inches apart.

  6. Bake at 350 degrees for 20 minutes.
