You better be egg-cited about this new breakfast recipe!

For the past six months or so I’ve started prepping breakfasts to eat at work so that I can take my time eating. I was tired of having to eat my breakfast in 5 minutes and rush out of the house. Not only was it hectic but it was bad for my digestion.

I’m constantly looking for new ways to eat eggs for breakfast that I can transport to work, this girl can only eat hard boiled eggs so often. So recently I’ve found the wonderful world of egg bakes.

Egg bakes are fun and delicious but I got so tired of constantly having to scrape egg off of my baking dishes, it was so tedious and took forever. So I decided one day I would take a crack at a breakfast pie, or as some would call it, quiche.

If I’m being honest making crust is not my thing. I had never made a pie crust in my life until this past year, so I had no idea what I was doing. It may have taken me about 10 tries to get the consistency right but I finally got the hang of crusts! Not only are they easier than I thought, they really add a different flavor and texture that makes me never want to eat an egg bake without a crust again.

The best way to start my day on a positive note is to have a breakfast I am looking forward to. Let me tell you I have not gotten sick of this breakfast yet and I’ve been eating in for a few weeks now. There are so many different variations this breakfast pie can make. You can add whatever vegetables or breakfast meat you want to change up the flavor. I happened to have bacon, spinach, and peppers on hand so that’s what went into my pie but I’ve also done it with sausage and other vegetables and it works just as well and is just as delicious

So start your day off on a good note and enjoy this breakfast pie! It can be made by even the most novice bakers and no one has to know it’s paleo!

What you’ll need:

Eggs
Spinach
Bacon- already cooked
Peppers
Almond flour
Avocado oil
Water
Garlic powder
Salt
Pepper

Ingredients:

CRUST:

2 cup almond flour
1/3 cup avocado oil
1-2 tablespoons water
½ teaspoon salt
½ teaspoon garlic powder

FILLING:

8 Eggs
4 pieces bacon (cooked)
1 cup spinach (chopped)
1 red bell pepper (chopped)
Salt and pepper to taste


Instructions:

  1. For crust, combine oil, flour, and spices, then add water to dough until no more dry ingredients are present.

  2. Roll out dough with a rolling pin between two sheets of parchment paper, then lay in pie dish.

  3. Crack and scramble eggs, add chopped up bacon, veggies, and salt and pepper together. Mix.

  4. Add egg mixture to pie crust.

  5. Bake at 375 for 30-35 minutes.

  6. Let cool and dig in :)
