Paleo Sugar Cookies

Growing up, I was the queen of sugar cookies. Every time I had to bring a baked good into class I would always volunteer my homemade sugar cookies. They were delicious and everyone loved them, but they took like 3 hours to make, then you had to cool and ice them.

So many memories were made making those cookies, cutting, and icing them. Even though my mom would always get frustrated when I volunteered to make them and she had to stay up late to ice them (sorry mom). And I hope to make just as many memories with my revamped sugar cookies.

These paleo sugar cookies taste so similar to the ones I used to make growing up but they take significantly less time to make. All the ingredients are better for you while still satisfying that sweet tooth. They certainly succeed in taking me back to my days of baking dozens of sugar cookies.

And while I don’t condone eating cookie dough because of the raw egg, if some of it happens to slip into your mouth you may just want to eat the whole bowl of cookie dough. I’ve never tried it but I’ve heard that this cookie dough is addicting ;)

Also you don’t have to refrigerate this cookie dough and roll it out to cut it into shapes. While that was always fun and festive it was ridiculously time consuming. With these paleo sugar cookies all you do is scoop them and place them on a cookie sheet an inch or so apart!

These cookies are perfectly moist and fluffy so you won’t be dying for a glass of milk after! You can leave them out for Santa or bake them any day of the year and they’ll be just as festive!

I personally love these sugar cookies plain, but if you have a sweet tooth you can ice them with Simple Mills vanilla icing, or a mixture of coconut butter and green food dye (homemade or not) like I did with mine.

What you’ll need:

Almond flour
Tapioca starch
Eggs
Ghee(or butter)
Maple syrup
Coconut butter
Vanilla
Baking soda

Paleo Sugar Cookies

Ingredients:

1 ½ cups almond flour
½ cup tapioca starch
2 eggs
¼ cup melted ghee (or butter, sub 1 for 2)
¼ cup maple syrup
2 tablespoons coconut butter
3 tablespoons vanilla
½ teaspoon baking soda


Instructions:

  1.  Mix dry ingredients together.

  2. Add wet ingredients, mixing thoroughly.

  3. Scoop small balls of dough and place on cookie sheet an inch or more apart.

  4. Bake at 350 for 15-20 minutes
