I have always been the biggest fan of nachos, they will forever be my favorite food. So the fact that I had to spend ridiculous amounts of money on dairy free cheese in order to make my nachos has never sat well with me. While I’m still coming up with a shredded cheese alternative, I absolutely have you covered with this dairy free cashew queso.

Would you believe it if I said this was the best dairy free queso I’ve ever tasted? Well you better believe it because it is, be prepared for the “are you sure this doesn’t have cheese?” reactions from friends and family.

This queso is made super creamy by the soaked cashews, not only are they a delicious healthy fat but they are filled with nutrients like calcium and magnesium. There’s nothing like a delicious dip that you know is also good for you!

Only made with 8 simple ingredients- this is something you can whip up with things mostly around your house. It’s creamy, flavorful, and you can add water to your desired texture if you want it a little more runny and less like a dip.

I believe this cashew queso could last about a week in the fridge after making, but it’s so dang good it’s never made it more than a few days in my house.

What you’ll need:

Cashews
Nutritional yeast
Water
Green bell pepper
Garlic powder
Onions
Tomatoes
Salt

Ingredients:

1 cup cashews soaked for 3-4 hours (can soak in boiling water for 1-2 hours)
1/2 cup nutritional yeast
1/2 cup water
1 green bell pepper
1/4 cup chopped onions
1 red tomato off vine
1 teaspoon salt
1/2 teaspoon garlic powder


Instructions:

  1. Soak cashews in a bowl of water for 3-4 hours, cashews must be submerged in water.

  2. Drain water from cashew bowl.

  3. Add all ingredients to blender.

  4. Blend to desired consistency, adding more water if necessary.
