Paleo Double Chocolate Chunk Cookies

Can you say double chocolate chunk chocolate cookies three times fast?

Yeah me neither but good thing you don’t have to say it in order to enjoy it!

If you couldn’t tell by now I love making soft baked cookies. There is nothing better than a soft, warm cookie right out of the oven. Especially when you bite in and get a gooey chocolate chunk that melts in your mouth.

These are decadent, and lightly sweet so they really represent a true dark chocolate cookie. But the light sweetness makes it too easy to eat like 5 of these cookies. If you don’t enjoy dark chocolate, you can add more sweetness to your liking. I have not tested the sweeter version of this cookie because I think they are perfect as they are!

You know I love to use minimal ingredients so that all my recipes are easy to make! With just a few minimal ingredients that you can get at your favorite grocery store or Whole Foods how could you go wrong?

In order to make this recipe fully paleo you need to use paleo chocolate chunks or chips. My favorite chocolate to bake with are Hu Kitchen chocolate gems, they only have 3 ingredients and they can be found at Costco if you’re in the Northeast! If you don’t have access to them, I also love Evolved Chocolate Signature Dark bars chopped up into chunks.

What you’ll need:

Almond Flour

Tapioca Flour

Cacao Powder

Maple Syrup

Eggs

Almond Milk

Vanilla

Baking Soda

Chocolate Chunks/Chips

Ingredients:

1 1/2 cups almond flour

1/2 cup tapioca flour

1/2 cup cacao powder

1/4 cup maple syrup

2 eggs

1/4 cup almond milk

2 teaspoons vanilla

1/2 teaspoon baking soda

1/2 cup (or more) chocolate chunks

Instructions:

  1. Pour all dry ingredients in a bowl, mix together.

  2. Pour all wet ingredients in a separate bowl, fold

  3. Add wet ingredients to dry, fold until batter is fully formed.

  4. Add chocolate chunks to your heart’s desire

  5. Bake at 350 for 15-20 minutes
