Paleo White Chicken Chili

It was a cold snowy day here in Delaware and I was in the mood for something cozy and warm to eat. Since I am currently not eating nightshades, chili was out of the question, but I realized- I could definitely eat a paleo white chicken chili!

I scoured the internet for nightshade free white chicken chili recipes and there were none, which only meant one thing, I had to come up with a recipe myself!

I say paleo white chicken “chili” but the texture is more like a stew or soup. With bone broth and coconut milk for the base it’s not very thick but I call it white chicken chili because of the flavors in this dish!

This gut healing white chicken chili is not only DELICIOUS, it is cozy, simple and AIP compliant! My boyfriend and I pretty much eat it weekly and the cold weather has just started!

If you want more of a kick you can always add in nightshades like chili powder, but I chose to omit them given my current dietary needs. I added extra black pepper so that should be just the kick you need anyway!

I have only tried making this recipe with chicken bone broth but any broth would do just fine! I just chose chicken so it would go with the flavors I was already using in the dish.

I love this recipe over some cauliflower rice or zucchini noodles, but I’m sure it would taste delicious over whatever vegetable you choose. This recipe typically feeds three people or two VERY HUNGRY people.

What you’ll need:

Chicken Bone Broth

Shredded Chicken

Full Fat Coconut Milk

Diced Onion

Garlic Cloves

Cilantro

Cumin

Oregano

Salt

Black Pepper

Ingredients:

3 cups bone broth

1 1/2 cups shredded chicken

1/3 cup full fat coconut milk (can use coconut cream instead)

1/4 cup diced onions

4 garlic cloves

1 1/2 tablespoons finely chopped cilantro

2 teaspoons cumin

1 1/4 teaspoon oregano

1 teaspoon salt

3/4 teaspoon black pepper

Instructions:

  1. In a pot add bone broth, spices, and shredded chicken.

  2. Simmer on medium heat

  3. Add full fat coconut milk in, should be using the solid part from the top of the can.

  4. Add the rest of the ingredients into the pot.

  5. Let simmer on medium, switch to low if starts to boil.
