Sweetener Free Paleo Blueberry Muffins

All quarantine I have seen people making banana bread left and right, but I’ve gone a different route by making these blueberry muffins almost weekly. These muffins are 100% sugar and sweetener free and after one bite you won’t even believe it!

No sweeteners or sugars means just that-NONE! These muffins contain no sugar alcohols like xylitol or fake sweeteners like monkfruit or stevia. This recipe is only sweetened by the natural sugars in unsweetened applesauce, vanilla flavoring(I opt for flavoring over extract), and blueberries.

I love this recipe because sometimes I want something mildly sweet but not a whole sugary baked good. This muffin satisfies my sweet tooth without being overly sugary or spiking my blood sugar.

As someone who has battled with Candida overgrowth multiple times I love sweetener free baked goods. I would not recommend enjoying these early on in eradicating your overgrowth- we often need some time away from fruits in order to fully eradicate the Candida. However, in months 2-3 of your protocol these muffins could be a good treat to enjoy something sweet without sending you back into a relapse of the overgrowth.

One thing I want to point out is that I opt for vanilla flavoring over vanilla extract. I imagine the recipe would be just as delicious with vanilla extract but I have never personally tried it. My reasons for opting for vanilla flavoring are that like I said early I have had Candida multiple times and vanilla extract contains alcohol in it so it feeds the overgrowth. Also vanilla flavoring just tastes better in my opinion, it doesn’t have the alcohol component so it is less bitter.

What you’ll need:

Almond flour

Eggs

Unsweetened applesauce

Almond milk

Baking soda

Vanilla Flavoring

Blueberries(fresh or frozen)

Ingredients:

1 cup almond flour

2 eggs

1/4 cup unsweetened applesauce

1/4 cup almond milk

1/4 teaspoon baking soda

1-2 tablespoons vanilla flavoring

As many blueberries as your heart desires

Instructions:

  1. Mix dry ingredients in a bowl.

  2. In a separate bowl mix all wet ingredients.

  3. Fold wet ingredients into dry, stir until thoroughly mixed.

  4. Slowly fold in blueberries until you reach your desire amount

  5. Put batter into muffin tins

  6. Cook at 350 degrees until top is golden brown
